Homemade beer ice cream recipe

Whether you're a fan of lager, ale, amber, stout, or fruit beer—from Paix-Dieu to Cocobänger—there’s a beer ice cream recipe to match your taste. After our popular beer jam recipe for breakfast, we’re now sharing our favourite recipe for beer ice cream to enjoy as a dessert.

For this recipe, we’ll use Cocobänger, a rich Estonian Imperial Stout from Põhjala Brewery, known for its bold chocolate and coconut flavours.

Ingredients:

  • 100 g sugar
  • 6 egg yolks
  • 50 cl beer (such as Cocobänger)
  • 25 cl single cream (40% fat)

Instructions:

  1. In a saucepan, simmer the beer over low heat for 30 minutes to reduce it and allow the alcohol to evaporate while concentrating the flavour.
  2. Add the cream to the reduced beer and bring the mixture to a boil.
  3. In a bowl, whisk the egg yolks and sugar until the mixture becomes pale and fluffy.
  4. Slowly pour the hot beer and cream mixture into the bowl with the eggs and sugar, stirring constantly.
  5. Pour the mixture back into the saucepan and heat gently, stirring continuously, until it thickens into a custard-like texture.
  6. Let it cool completely, then transfer it to an ice cream maker and churn according to the manufacturer's instructions.

For an extra indulgent twist, pour a splash of dark beer over the ice cream before serving. American brewery Founders is a great choice for this, offering an excellent range of dark beers like Breakfast Stout, Porter, CBS, and KBS.
