Beer-Flavored Epiphany cake recipe
Ingredients
For the pastry:
- 2 sheets of puff pastry
- 1 fève (lucky charm) – don’t forget it!
For the almond cream:
- 65 g soft butter
- 85 g icing sugar
- 100 g ground almonds
- 5 g cornflour (1 tsp)
- 1 tsp dark rum
- 1 egg
- 160 g of beer crème pâtissière (see recipe below)
For the beer crème pâtissière:
- 75 ml milk
- 50 ml dark beer
- 10 g cornflour
- 30 g sugar
- 1 egg yolk
- 12 g soft butter
- 1 vanilla pod
For the glaze:
1 egg yolk + a little milk
Instructions
1. Preparing the beer crème pâtissière
In a saucepan, mix the cornflour with half the sugar. Gradually add the milk and beer while whisking.
Split the vanilla pod, scrape out the seeds, and add both to the mixture. Bring to a boil while stirring.
In a separate bowl, whisk the egg yolk with the remaining sugar, then slowly incorporate the hot liquid while whisking.
Return to the heat and stir continuously until the mixture thickens.
Once the cream cools to around 50°C, whisk in the butter, then refrigerate.
2. Preparing the almond cream
In a bowl, sift together the icing sugar, ground almonds, and cornflour.
Soften the butter with a spatula, then add the dry ingredients followed by the egg.
Mix in the rum and the prepared beer crème pâtissière.
3. Assembling the cake
Preheat the oven to 180°C (gas mark 6).
Place the first sheet of puff pastry on a baking sheet.
Spread the almond cream evenly, leaving a 2 cm border around the edges.
Insert the fève (lucky charm).
Brush the pastry border with water, then cover with the second pastry sheet, pressing gently to seal.
Brush the top with the egg yolk-milk mixture.
Use a knife to create decorative patterns.
4. Baking
Bake for approximately 35 minutes at 180°C (gas mark 6) until golden brown.
Allow to cool slightly before serving.
