What is a Maibock beer ?

Maibock, also known as Helles Bock, is a relatively pale, bottom-fermented Bock beer originating from Germany. It heralds and celebrates the arrival of spring, as its name is associated with the month of May.

Maibock is a modern adaptation of traditional Bock, created in response to the rising popularity of Pilsner and Lager beers in the mid-1800s. This variant is relatively recent compared to other Bock styles. It is considered a lightened Bock. Fittingly, “helles” means “bright” in German. With its blonde color, it naturally contrasts with the darker and more intense Doppelbock.

Compared to traditional Bock, Maibock has lighter flavors, is more hoppy, and thus more bitter. It stands out with its spicy and peppery notes, offering a balanced flavor profile between malts and hops. It presents a smooth body and a drier finish on the palate due to its more prominent hop presence.

How do you brew a Maibock beer?

This style is brewed using lightly roasted Munich, Vienna, and Pilsner malts, along with special yeasts that highlight the hop character. Only the first wort is used to create a more rounded malt aroma. The beer is aged for four to six weeks, then conditioned and stored cold for up to six months. Maibock also employs the prolonged decoction technique, a traditional and intensive mashing process that involves removing a portion of the wort, boiling it, and returning it to the main mash to intensify flavor.

How should a Maibock beer be enjoyed?

Maibock is designed to be refreshing and is best enjoyed very cold, at an ideal temperature of 4°C. Serve it in a goblet glass or a stoneware tankard to maintain its traditional charm. It pairs well with dishes like fish or poultry, and for dessert, try it with a white chocolate cheesecake.
