What is a Trappist beer?

Trappist beer is brewed by, or under the supervision of, monks from the Cistercian Order of the Strict Observance, commonly referred to as Trappists. These beers must meet strict criteria to carry the Authentic Trappist Product (ATP) label, issued by the International Trappist Association.

To be classified as a Trappist beer, the following conditions must be met:

  • The beer must be brewed within the walls or in close proximity to a Trappist abbey.
  • Production and marketing must be managed by the monks or by lay employees under their supervision.
  • Profits must support the monastic community or charitable causes.

Trappist beers are known for their high alcohol content—generally above 5%—and are typically brown or dark in colour, though variations exist.

How are Trappist beers brewed?

Trappist beers are top-fermented, using Saccharomyces cerevisiae yeast at fermentation temperatures around 24°C. Most of these beers undergo bottle refermentation, which enhances their complexity and carbonation. The fermentation process lasts between 3 and 8 days, depending on the recipe and conditions.

Unlike bottom-fermented beers, Trappist brews typically have a shorter shelf life due to their live yeast content.
