Authentic Fricadelle with Beer – A Belgian Classic !

Everyone has heard of it, but few know what’s really inside – today, let’s talk about the famous fricadelle! While the legendary Claudy Focan in Dikkenek had his own (questionable) theory about its ingredients, the true recipe remains a mystery.

But don’t worry! We’re here to offer you a delicious homemade version, enhanced with a generous splash of Belgian beer.

Ingredients (Serves 4)

  • 250g minced beef (or a mix of pork and chicken, according to preference)
  • 250g minced veal
  • 1 slice of bread
  • 1 egg
  • 3 shallots, chopped
  • 3 cloves garlic, minced
  • 2 sprigs parsley, chopped
  • 1 onion, finely chopped
  • Salt & pepper to taste
  • 50g butter
  • 1 33cl bottle of Belgian beer (Chimay Blue, Westmalle, Rochefort, Stella Artois or your favorite)
  • 1 tablespoon flour
  • 1 pinch each of paprika, nutmeg, and cinnamon

How to Make Fricadelle with Beer

1️⃣ Prepare the bread: Soak the slice of bread in a little beer, then crumble it.

2️⃣ Chop the aromatics: Finely chop the shallots, garlic, parsley, and onion.

3️⃣ Mix the ingredients: In a large bowl, combine the minced meats, egg, crumbled bread, salt, pepper, and chopped aromatics.

4️⃣ Shape the fricadelles: Add the flour, mix well, and shape into small sausages or meatballs.

5️⃣ Cook with beer: Melt the butter in a frying pan, brown the fricadelles, then pour in the beer. Occasionally baste them with the sauce as they cook.

6️⃣ Serve & Enjoy: Pair your homemade fricadelle with crispy fries, classic sauces like mustard, mayonnaise, or ketchup, and of course, a Belgian dark beer – a must for authenticity!
