Beer Pancake Cake Recipe
Ingredients

- 200g dark chocolate, coarsely chopped
- 80g caster sugar
- 80g honey
- 13cl dark beer
- 75g butter, at room temperature
For the Beer Pancake Batter:
- 300g flour
- 50cl milk
- 25cl lager (for example Peroni beer)
- 3 eggs
- 40g melted butter

Preparation
Making the Ganache:
1. In a small saucepan, combine the sugar and honey. Heat over low heat, stirring gently, until it reaches a boil.
2. Let it cook for about 7 minutes until it turns a rich amber color.
3. Carefully pour in the dark beer and stir.
4. Return the pan to the heat and mix until fully combined.
5. Remove from heat and set aside.
6. Place the chopped chocolate in a bowl and pour the warm beer caramel over it.
7. Let sit for 3 minutes, then whisk until smooth.
8. Add the butter, whisking until the ganache is glossy and silky.
Preparing the Pancake Batter:
1. In a mixing bowl, combine the flour and sugar, then create a well in the center.
2. Add the eggs and melted butter, mixing well.
3. Gradually pour in the milk while stirring to prevent lumps.
4. Add the beer and mix until fully incorporated.
5. Let the batter rest for at least 1 hour.
6. After resting, mix again and cook the pancakes in an oiled pan.
