Chocolate Guinness Cake Recipe

Ingredients (Serves 8)

For the cake:

  • 250g butter
  • 75g dark chocolate
  • 25cl Guinness Foreign Extra Stout or Brown Ale (Leffe Brune).
  • 300g caster sugar
  • 275g flour
  • 2 eggs
  • 15cl thick crème fraîche
  • ½ packet of baking powder

For the icing:

  • 300g fromage frais (cream cheese)
  • 150g icing sugar
  • 13cl thick crème fraîche

Instructions

1. Preheat your oven to 180°C. Grease and flour a 23cm cake tin. (For a fun twist, use cupcake tins for mini Chocolate Guinness Cakes!)

2. In a large saucepan, heat the Guinness and butter over low heat until the butter melts.

3. Remove from heat and whisk in the sugar and dark chocolate until smooth.

4. In a separate bowl, beat the crème fraîche and eggs, then incorporate them into the saucepan mixture.

5. In another bowl, combine the flour and baking powder. Gradually add this dry mixture to the wet ingredients in the saucepan.

6. Whisk vigorously until smooth, then pour the batter into the prepared tin. Bake for 45 minutes on the middle oven rack.

Preparing the Icing

7. While the cake bakes, whisk the cream cheese with the crème fraîche until smooth.

8. Sift the icing sugar and mix it in until fully combined.

Final Touch

9. To check if the cake is done, insert a knife into the center—if it comes out clean, it's ready. Otherwise, bake for a few more minutes.

10. Remove from the oven and let it cool before unmolding.

11. Wait until the cake is completely cool before frosting. Spread the icing over the top for a smooth finish.
