Ingredients (serves 5)
- 4 eggs
- 150 g sugar
- 1 sachet of vanilla sugar
- 33 cl of Porter or Stout beer (or a brown Ale Leffe Brune)
- Up to 50 cl of coffee
- 250 g mascarpone
- 2-3 packs of ladyfingers
- Cocoa powder
Instructions
Step 1: Prepare the cream
- Separate the egg yolks and whites into two bowls.
- Beat the yolks with sugar and vanilla sugar until smooth.
- Mix in the mascarpone until you get a creamy texture.
- Whisk the egg whites until stiff peaks form (tip: add a pinch of salt for better consistency).
- Gently fold the egg whites into the mascarpone mixture using a spatula for a fluffy cream.
Step 2: Assemble the layers
- Mix the beer and coffee in a bowl.
- Briefly dip the ladyfingers into the liquid and arrange them as the first layer in a dish (don’t soak them too much to avoid excess moisture).
