
It's the middle of winter—the perfect season for comforting stews. These slow-cooked dishes will warm you up and bring joy to your meals. At PerfectDraft, as proud northerners, we’re excited to share a delicious beer-braised lamb stew, inspired by the traditional Flemish carbonnade, with tender turnips.

Ingredients (Serves 2)
- 500 g lamb breast
- 500 g turnips
- 1 onion
- 30 g cooking butter
- 33 cl Kwak beer
- 1 bouquet garni (thyme & bay leaves)
- 1 tablespoon mustard
- 1 vegetable stock cube
- 4 slices gingerbread
- Salt & pepper
Instructions
Prepare the ingredients
- Cut the lamb breast into small pieces and finely chop the onion.
Brown the meat
- Melt the butter in a casserole dish over low heat.
- Add the lamb and onion, then sauté for a few minutes.
Deglaze with beer
- Pour in the Kwak beer and stir well.
This strong, iconic Belgian beer with spicy and caramelized notes creates a rich, flavorful sauce that perfectly balances sweet and savory elements.
Build the stew base
- Add the mustard, stock cube, and gingerbread slices.
- Stir until the gingerbread is fully absorbed into the sauce.
- Season with salt, pepper, and the bouquet garni, then mix well.
Slow cook the stew
- Add a little water—just enough to submerge the meat without diluting the flavors. Be careful not to add too much water, or the sauce will become too thin.
- Let the stew simmer on low heat, stirring occasionally to prevent sticking.
Add the turnips
- While the stew simmers, peel the turnips.
- After 1 hour of cooking, add them to the dish and cook for at least 30 more minutes until tender.
Adjust the sauce & serve
- If you prefer a thicker sauce, whisk in a small amount of flour to avoid lumps.
- Once the meat is tender and the turnips are soft, serve immediately.
