How to prepare sauerkraut with beer?
The key ingredient remains cabbage, which requires a specific preparation. For a perfect choucroute, finely slice one or more cabbages and place them in a large pot. Once you reach a 5 cm layer, sprinkle with salt and add juniper berries and cumin. Tamp down with a pestle to remove air and extract the juice. Repeat the process until the container is 4/5 full. Pour a little water into the groove provided, place stones on top, and seal the pot. Let it ferment at room temperature for a week, then store it in a cool place, like a cellar, for three weeks.

Cooking your sauerkraut
Once you have your raw sauerkraut, it’s time to cook! This Alsatian specialty includes various herbs and spices, such as cloves, juniper berries, peppercorns, and cumin. For the meat, add sausages, smoked bacon, or other cuts of your choice. Finally, pour in 75 cl of lager to enhance the flavors.
