How to prepare sauerkraut with Oktoberfest beer
Ingredients (Serves 6):
- 1.5 kg raw sauerkraut
- 1 piece of smoked bacon
- 3 white sausages (Weisswurst)
- 3 smoked sausages
- 15 potatoes
- Duck fat
- 1 litre Oktoberfest beer
- 1 onion, sliced
- Salt and pepper
- A few bay leaves
Instructions:
- Coat the bottom of a large casserole dish with duck fat.
- Add half of the raw sauerkraut, one or two bay leaves, sliced onion, and a pinch of salt and pepper.
- Place the smoked bacon, smoked sausages, and Weisswursts on top. Cover with the remaining sauerkraut.
- Pour the beer over the ingredients, cover, and let simmer for 2½ hours on low heat.
- Add the potatoes during the last hour of cooking.
