How to prepare sauerkraut with Oktoberfest beer

Ingredients (Serves 6):

  • 1.5 kg raw sauerkraut
  • 1 piece of smoked bacon
  • 3 white sausages (Weisswurst)
  • 3 smoked sausages
  • 15 potatoes
  • Duck fat
  • 1 litre Oktoberfest beer
  • 1 onion, sliced
  • Salt and pepper
  • A few bay leaves

Instructions:

  1. Coat the bottom of a large casserole dish with duck fat.
  2. Add half of the raw sauerkraut, one or two bay leaves, sliced onion, and a pinch of salt and pepper.
  3. Place the smoked bacon, smoked sausages, and Weisswursts on top. Cover with the remaining sauerkraut.
  4. Pour the beer over the ingredients, cover, and let simmer for 2½ hours on low heat.
  5. Add the potatoes during the last hour of cooking.
