
At PerfectDraft, we love exploring unique culinary combinations featuring beer. After the success of our Tripel Karmeliet jam recipe, we couldn’t stop there! Here’s a new idea that’s both surprising and delicious, guaranteed to warm you up during the colder months.
Introducing: Victoria soup !
This is just one take on the recipe, and you can of course adapt it. For example, try using a Goose Island IPA for a touch of bitterness, or Camden Pale Ale for more malty, herbaceous notes. Here, we’ve chosen Victoria for its rich and sweet character to create a truly indulgent soup. Ready to get cooking?
Ingredients for 6 people:
- 3 potatoes
- 3 carrots
- 2 onions
- 2 leeks
- 50 cl Victoria beer
- 100 g crème fraîche
- 25 g butter
- Fresh parsley
- Salt
- Pepper
Preparation steps:
1 – Peel the potatoes, carrots, leeks, and onions. Dice them into small cubes.
2 – In a large pot, sauté the onions with 25 g of butter and a pinch of salt until translucent.
3 – Add the leeks and potatoes, and cook for 5 minutes, stirring regularly.
4 – Add the carrots and pour in 50 cl of Victoria beer.
5 – Bring to a boil, then reduce the heat and simmer for 30 minutes.
6 – Add 100 g of crème fraîche, along with salt and pepper to taste.
7 – Blend the mixture until smooth and creamy.
8 – Garnish with freshly chopped parsley and serve hot.
