  • 25cl coconut milk
  • 1 tablespoon curry paste
  • 1 tablespoon fish sauce
  • Salt & pepper
  • 1 Thai chili (optional, for extra spice)
  • 200g green vegetables (peas, broccoli, courgettes, or green beans)
  • Cooked rice (for serving)

Preparation

1. Heat a large wok-style frying pan over medium heat. Add olive oil and sauté the shallot for about 5 minutes until golden brown.

2. Add the chopped garlic and fry until fragrant.

3. Pour in the IPA beer, followed by the coconut milk, curry paste, and fish sauce. Season with salt and pepper. For an extra kick, add finely chopped Thai chili.

4. Simmer for 10 minutes, allowing the sauce to reduce slightly.

5. Reduce the heat to low, add the cod fillets, and cover the pan tightly. Let them simmer gently until cooked through. Test with a fork—the fish should flake easily.

6. Stir in your choice of green vegetables and cook for a few more minutes.

7. Serve hot with steamed rice.
