Following last week's release of Tiny Rebel Key Lime in kegs and cans—a wonderfully refreshing citrus lager—we've decided to continue exploring tangy flavors. Today, we’re sharing a delicious lime meringue pie recipe with beer. Yes, beer isn’t just for savory dishes—it can be used in baking too!
Beer-Flavored Lime Meringue Pie
To make this recipe, you’ll need a pie dish, a sheet of baking paper, and some white beans for blind baking the shortcrust pastry. A piping bag and a blowtorch will also come in handy for the meringue topping.

Baking time: 20 minutes
Chilling time: 2 hours
Serves: 6-8 people
Ingredients
For the shortcrust pastry:
- 1 egg
- 50g caster sugar
- 50g icing sugar
- 250g flour
- 150g butter
- 1 pinch of salt
For the beer-lime cream:
- 3 limes (juice and zest)
- 3 eggs
- 150g caster sugar
- 1 tablespoon cornflour
- 10cl Tiny Rebel Key Lime beer or Tiny Rebel Clwb Tropica
- 75g butter

For the meringue:
- 2 egg whites
- 75g caster sugar
1 – Making the Shortcrust Pastry
If you prefer, you can use store-bought shortcrust pastry, but homemade always tastes better!
Beat the egg in a bowl, then add the caster sugar, icing sugar, and a pinch of salt. Mix in the flour and knead with your fingertips. Add the softened butter in small pieces and blend everything together until smooth.
Form the dough into a ball, cover it with cling film, and refrigerate for at least 1 hour. Meanwhile, preheat your oven to 180°C about 20 minutes before rolling out the dough.
Roll out the pastry with a floured rolling pin and place it in your pie dish. Prick the bottom with a fork, then cover it with baking paper and white beans (or lentils/metal baking beads). Blind bake for 10 minutes at 180°C, then remove the beans and bake for another 8-10 minutes until lightly golden.
2 – Preparing the Beer-Lime Cream
Grate the lime zest and squeeze the juice. Bring both to a boil.
In a bowl, whisk the eggs, caster sugar, and cornflour. Slowly pour in the hot lime juice while whisking continuously.
Gradually stir in 10cl of Tiny Rebel Key Lime beer. This tangy lager enhances the citrusy flavors while the malt notes balance the cream. If using a can, just pour; if using a beer tap, dispense the needed amount into a glass.
Heat the mixture over medium heat, stirring constantly until it thickens into a smooth cream. Let it cool, then whisk in the softened butter until fully incorporated.
Pour the cream into the pre-baked tart shell and refrigerate for a few hours to allow it to set properly.
3 – Finishing with the Meringue
If you prefer a classic lime tart, you can skip the meringue, but at Saveur Bière, we love a little indulgence!
Separate the eggs and whisk the whites until stiff peaks form. Gradually add the sugar and continue whisking.
Remove the tart from the fridge and pipe the meringue on top using a piping bag. Use a blowtorch to lightly caramelize the meringue, adding a golden touch and a hint of caramelized flavor.
