Wild Boar Stew with Beer: A Rich and Flavorful Recipe

Easy and Quick Wild Boar Stew Recipe

Stewing is a slow-cooking method that involves simmering meat in a covered pot with a flavorful braising liquid. While red wine is often used, we’re replacing it with a characterful beer for a unique depth of flavor.

Ingredients (Serves 6)

  • 1 to 1.5 kg wild boar, cut into chunks
  • 4 to 6 carrots
  • 3 to 4 onions, chopped
  • 1 bouquet garni
  • 2 tablespoons olive oil
  • 2 cloves
  • Nutmeg (to taste)
  • Salt and pepper
  • 1.5 liters of beer (Goudale or Leffe Prestige recommended)

Preparation Steps

1. Prepare the Marinade: Peel and slice two carrots. In a large dish, combine the wild boar pieces, two onions, sliced carrots, cloves, salt, pepper, and the bouquet garni. Pour in 1.5 liters of beer (lager or amber ale). Let it marinate for 12 hours to allow the flavors to infuse.

2. Brown the Ingredients: Drain the marinated meat and set aside the liquid. In a large pot, heat the olive oil over medium heat and sauté the remaining onions and carrots until softened. Add the wild boar pieces and brown them on all sides.

3. Simmer the Stew: Add the marinade ingredients back into the pot, along with a dash of nutmeg if desired. Heat gently (without boiling), then pour the liquid over the meat. Cover and simmer over low heat for 3 hours, stirring occasionally.

4. Final Seasoning: Before serving, adjust the salt and pepper to taste. This dish pairs wonderfully with steamed potatoes or candied turnips.

There are many other ways to prepare wild boar using lagers, amber ales, stouts, porters, IPAs, or even fruit beers. You can also cook younger wild boar (under six months old) or sows with beer for a different taste experience.
