Ingredients

For the dough:
  • 13 cl milk
  • ½ sachet dry baker's yeast
  • 500 g flour
  • A large pinch of salt
  • 40 g melted butter
  • 13 cl Spaten Oktoberfest beer
For boiling:
  • 1 L water
  • A large pinch of salt
  • 50 g bicarbonate of soda
For decoration:
  • 1 lightly beaten egg
  • 1 tablespoon water
  • Sesame seeds

1 - Prepare the dough

  1. Warm the milk over low heat, then pour it into a bowl and sprinkle in the yeast. Let it sit for 2 minutes.
  2. In another bowl, mix 125 g flour, lukewarm milk, melted butter, and Spaten Oktoberfest beer. Stir with a wooden spoon.
  3. Gradually add the remaining flour and salt, mixing until you get a sticky dough.
  4. Knead for 5 to 8 minutes until the dough becomes smooth, elastic, and no longer sticky.
  5. Place the dough in a lightly oiled bowl, cover with cling film, and let it rise in a warm place for 1 hour until doubled in size.

2 - Shape & boil the pretzels

  1. Preheat the oven to 210°C and line a baking tray with greaseproof paper.
  2. Once risen, punch down the dough, place it on a floured surface, and divide it into 6 equal pieces.
  3. Bring water to a simmer in a large saucepan. Add salt and bicarbonate of soda.
  4. Dip each pretzel dough piece into the water for 20 seconds (do not let it boil).
  5. Shape the pretzels: roll each piece into a rope, form a U-shape, cross the ends, and press them onto the loop.

3 - Decorate & bake

  1. In a small bowl, mix the beaten egg with water. Brush the pretzels with the mixture.
  2. Sprinkle with coarse salt and sesame seeds.
  3. Bake for 10 to 15 minutes until golden brown.
