Ingredients
For the dough:
- 13 cl milk
 - ½ sachet dry baker's yeast
 - 500 g flour
 - A large pinch of salt
 - 40 g melted butter
 - 13 cl Spaten Oktoberfest beer
 
For boiling:
- 1 L water
 - A large pinch of salt
 - 50 g bicarbonate of soda
 
For decoration:
- 1 lightly beaten egg
 - 1 tablespoon water
 - Sesame seeds
 
1 - Prepare the dough
- Warm the milk over low heat, then pour it into a bowl and sprinkle in the yeast. Let it sit for 2 minutes.
 - In another bowl, mix 125 g flour, lukewarm milk, melted butter, and Spaten Oktoberfest beer. Stir with a wooden spoon.
 - Gradually add the remaining flour and salt, mixing until you get a sticky dough.
 - Knead for 5 to 8 minutes until the dough becomes smooth, elastic, and no longer sticky.
 - Place the dough in a lightly oiled bowl, cover with cling film, and let it rise in a warm place for 1 hour until doubled in size.
 
Why Spaten Oktoberfest Beer? Its malty and herbaceous flavors with hints of wood, caramel, and spices enhance the pretzels’ sweetness, creating a rich and flavorful bite.

2 - Shape & boil the pretzels
- Preheat the oven to 210°C and line a baking tray with greaseproof paper.
 - Once risen, punch down the dough, place it on a floured surface, and divide it into 6 equal pieces.
 - Bring water to a simmer in a large saucepan. Add salt and bicarbonate of soda.
 - Dip each pretzel dough piece into the water for 20 seconds (do not let it boil).
 - Shape the pretzels: roll each piece into a rope, form a U-shape, cross the ends, and press them onto the loop.
 
3 - Decorate & bake
- In a small bowl, mix the beaten egg with water. Brush the pretzels with the mixture.
 - Sprinkle with coarse salt and sesame seeds.
 - Bake for 10 to 15 minutes until golden brown.
