Beer soup recipe

It’s winter—the perfect time to bring out your pots and pans for delicious soups and veloutés to keep you warm. But since we’re beer specialists, we’re naturally going to suggest an easy beer soup recipe!

For a rich, flavorful beer soup, we recommend using Perle Nature from Brasserie Perle, a French lager brewed in the heart of Alsace. With its hoppy, cereal, and herbal notes, this fresh, sparkling beer will perfectly enhance the taste of this hearty vegetable soup.

 Prep time: 20 minutes | Cooking time: 45 minutes

 Ingredients (Serves 6)

  • 3 carrots
  • 2 leeks
  • ½ stick celery
  • 2 onions
  • 80 g bread croutons
  • 50 g unsalted butter
  • 50 cl Perle Nature beer or Mahou Beer
  • 200 g smoked bacon
  • 25 cl liquid crème fraîche
  • 1 sprig parsley
  • Salt & pepper

 Instructions

 Prepare the vegetables

  • Remove the white part of the leeks, wash them thoroughly, and slice them.
  • Peel the carrots, celery, and one onion, then finely slice the onion.

 Start cooking

  • In a pressure cooker, melt 25 g butter and sweat the onion until translucent.
  • Add the sliced leeks and cook for 5 minutes.
  • Then, add the carrots and celery.

 Add the beer & simmer

  • Pour in the Perle Nature beer and add enough water to cover the vegetables.
  • Season with salt and pepper.
  • Bring to a boil, then reduce to a simmer and cook for 30 minutes.

 Prepare the toppings

  • Finely chop the second onion.
  • In a frying pan, melt the remaining butter, then sauté the onion and smoked bacon until golden brown.

 Blend & serve

  • Blend the soup until smooth.
  • Stir in the crème fraîche and smoked bacon.
  • Serve hot in bowls, garnished with a sprig of parsley and crispy bread croutons for extra texture.
