With the summer heat, we crave light, easily digestible dishes. Even better when they’re made with fresh garden vegetables! This beer-infused courgette crumble is a simple yet flavorful recipe that will delight your taste buds.
Which Beer Should You Use for a Beer-Flavored Courgette Crumble?
Cooking courgette crumble with beer isn’t common, but trust us—it adds an incredible depth of flavor to the dish.
For the best results, choose a beer with spicy, malty, and cereal notes. We recommend a Belgian amber beer or a Belgian pale ale, such as Bost Ale or Corsendonk Rousse.
Unlike a traditional crumble, beer enhances the dish’s character and brings out richer, more complex flavors. You’ll be pleasantly surprised!
Beer-Flavored Courgette Crumble Recipe
Preparation time: 30 minutes
Cooking time: 20-30 minutes
Ingredients (Serves 4)
- 2 large courgettes
- 3 slices of cooked ham
- 20cl beer (Stella Artois or Hawkstone Lager)
- 50g butter
- 75g flour
- 75g ground almonds
- 1 clove of garlic
- 3 tablespoons olive oil
- Salt & pepper
- Herbes de Provence
Preparation
1. Wash the courgettes and cut them into small cubes. Peel and finely chop the garlic.
2. Heat the olive oil in a frying pan over medium heat. Sauté the courgettes and garlic for 15 minutes, seasoning with salt, pepper, and Herbes de Provence. Halfway through cooking, pour in the beer and stir regularly to let the courgettes absorb its flavors.
3. Preheat the oven to 180°C.

4. Meanwhile, prepare the crumble topping. In a bowl, combine the flour, ground almonds, and butter. Using your fingers, mix and crumble until you get a sandy texture. Keep the mixture cool until ready to use.
Tip: The butter should be soft at room temperature for the crumble to form properly. If it’s too hard or melted, it won’t work.
5. Slice the ham into thin strips and add them to the pan with the courgettes at the end of the cooking time.
6. Transfer the courgette mixture into an ovenproof dish and evenly spread the crumble topping over it.
7. Bake for 20 to 30 minutes, until golden and crispy.
Chef’s Tip: If you love cheesy flavors, replace the butter with fresh goat cheese. It’s less fatty and gives the crumble a delightful tangy taste that pairs beautifully with the sweetness of the courgettes.
