Easy Rabbit with Beer and Prunes Recipe
Ingredients (Serves 4):
- 250g prunes
- 2 onions, chopped
- 60g flour
- 1 rabbit, cut into pieces (saddle and legs recommended)
- 1 shallot, chopped
- 1 garlic clove, minced
- 1 chicken stock cube
- 1 bouquet garni (thyme, bay leaf, parsley)
- 5cl white wine
- 33cl beer (lager recommended)
- 2 tbsp beer (for soaking prunes)
- Hot water
- Salt & pepper
- Butter (for cooking)
Instructions:
- Soak the prunes in a mixture of 2 tablespoons of beer and hot water.
- Season the rabbit pieces with salt and pepper, then coat them lightly with flour.
- Brown the rabbit in a saucepan with melted butter, then remove and set aside.
- In the same pan, sauté the onions and shallots until golden.
- Deglaze with 5cl of white wine and the remaining beer, scraping up any browned bits.
- Return the rabbit to the pan, then add the bouquet garni, garlic, and stock cube for extra flavor.
- Cover and simmer over low heat for 50 minutes, stirring occasionally.
- Add the soaked prunes and let them infuse for a few more minutes before serving.

Choosing the Right Beer for Cooking Rabbit
For this recipe, a lager works well, but other beer styles can enhance the dish in different ways:
- For a richer, deeper flavor: Use a dark beer like a Dubbel or Stout.
- For a fruity twist: Try a red fruit beer such as Moulin d'Ascq, which adds raspberry and cherry notes that complement the prunes beautifully.
