Authentic Welsh Recipe

Ingredients (Serves 2)

  • 400g cheddar
  • 12.5cl McChouffe dark beer or brown ale (Leffe Brune).
  • 2 slices of farmhouse bread
  • 2 thick slices of cooked ham
  • 2 tablespoons mustard

Preparation

1. Cut the cheddar into small cubes for easier melting.

2. Slice the bread thickly, ensuring it fits well in your serving dishes.

3. Drizzle a few drops of beer onto each slice of bread, then spread with mustard for extra flavor.

4. Place a slice of ham on each piece of bread, folding it slightly.

5. In a large frying pan, melt the cheddar over low heat, gradually adding the McChouffe dark beer while stirring continuously.

6. Once the mixture is smooth and creamy, stir in the remaining mustard.

7. Pour the melted cheese mixture over the ham-topped bread, ensuring full coverage.

8. Bake at 210°C (gas mark 7) for 10-12 minutes until golden brown.

9. Remove from the oven and serve immediately with crispy fries and/or a fresh green salad.

10. And of course, pair it with a cold McChouffe for the ultimate experience!
