A recipe for a seasonal beer
Start by gathering the ingredients:
- 3 kg Pilsen MD malt
- 1 kg Vienna malt
- 300 g white wheat
- 100 g amber Candi sugar
- Magnum hops (pellets)
- Styrian Colibri hops (pellets)
- Belle Saison yeast
- Water with controlled physical and chemical characteristics
Mashing: Crush the grains, then heat 18.2 L of water to 70.6°C. Perform saccharification at 64°C for 1h15. Deactivate enzymes at 76°C for 10 minutes. Filter the spent grains with 12.4 L of water at 75°C.
Boiling: You should now have 26.7 L of wort. Add 10 g of Magnum hops before boiling. Once finished, turn off the heat and add 125 g of Styrian Colibri hops. Let stand for 15 minutes, then cool the wort rapidly.
Fermentation:
- Primary fermentation: 10 days at 28°C
- Secondary fermentation: 10 days at 18°C
- Bottle conditioning: 15 days at 20°C
Carbonation should reach 3.0 volumes of CO₂ per litre for a lively, sparkling finish.
