Let’s continue our culinary journey, this time to Denmark, with Sally’s Selection by Mikkeller, the world-renowned gypsy brewer who recently opened a bar in Paris.

Mikkeller brewery

Founded in 2006 in Copenhagen, Mikkeller has become an icon in the world of craft beer. At its origins were Mikkel Borg Bjergsø, a former high school teacher, and journalist Kristian Klarup Keller. Inspired by American breweries, they crafted unique recipes that quickly drew attention at international competitions. Among them, the legendary Beer Geek Breakfast brought Mikkeller into the global spotlight.

Mikkeller made its debut at the Copenhagen Beer Festival with eight beers, marking the start of its meteoric rise. To meet the growing demand, Mikkel brewed at established breweries, pioneering the concept of the gypsy brewer — a brewery without its own production facilities, relying instead on collaborations. In 2007, Keller left the project, uninterested in scaling production, while Mikkel pursued his vision of creating more recipes. By 2008, Mikkeller beers were sold in over 40 countries. In 2010, Mikkel’s twin brother, Jeppe, also departed, later founding Evil Twin Brewing in the USA.

Today, Mikkeller boasts over 800 beers, most brewed at De Proefbrouwerij in Belgium, alongside collaborations with friends at BrewDog, Lervig, Jester King, AleSmith, To Øl, and Nøgne Ø.

Style: german Pilsner

The German Pilsner is one of the most iconic beer styles, admired and imitated worldwide. This bottom-fermented lager is pale straw-yellow with a fine white head. It combines a delicate malty sweetness with moderate to pronounced hoppy notes, making it both balanced and refreshing. Unlike the Bohemian Pilsner, it is lighter in colour and bitterness, but just as challenging to brew perfectly.

Tasting Sally’s selection

True to Mikkeller’s love of hops, Sally’s Selection is a German Pilsner that showcases noble German hops. This style leaves no room for imperfections: it is crisp, pure, and incredibly precise. The beer pours a golden hue with slight cloudiness. On the nose, aromas of white bread, peach, apricot, and gooseberry mingle with herbal hop notes.

On the palate, expect a clean and crisp lager with moderate bitterness and fine carbonation. Its malty backbone shines, offering flavours of cereal and herbs in perfect balance. The finish is short yet enticing, leaving lingering hints of bread and hop bitterness that invite another sip. Brewed in the traditional German Pils style, it closes with a refreshing grassy hop finish.

Food pairing

The light body and malty character of Sally’s Selection pair beautifully with shellfish, fresh salads, chicken, or even white cheddar cheese.
